Einkorn Sourdough Discard Pizza

 


Last night I found a new use for my sourdough discard. 

Sometimes I am drowning in it. 

Start off by preheating your cast-iron skillet in your oven at 425°

I take about 3 cups straight out of my discard jar and pour it into my oiled large hot cast iron skillet and bake 10 minutes. 425°

Pull it out of the oven and top it. 

Bake another 5-10 minutes 

It’s not like a pizzeria pizza. It’s more like a digiorno , but it’s delicious and such a great way to use the discard. 

I didn’t have much mozzarella so I only topped it with olive oil, mushrooms, peppers, garlic, and spices and about 1/3 a cup of mozzarella sprinkled around. I didn’t have a sauce so I made one in my blender. It was delicious. 

I’m definitely going to branch out with this. I’m not throwing away my discard so I’m trying to find a lot of uses to use it and my family doesn’t eat pancakes every week. 

PS. My sourdough is made with Einkorn flour
