Low Carb Yeast Bread (coconut flour version) Keto Friendly
This is good and has a nice texture, but I will say I like the almond flour version better.
In the first bowl:
1.5 C coconut flour
3.75 TBSP psyllium flour
4 tsp baking soda
use a hand mixer to 'whisk"
In another bowl:
4 tsp yeast
1.5 c hot tap water
1 tsp salt
Mix until combined
Add to dry ingredients along with
7 eggs, beaten
3 TBSP apple cider vinegar
3 TBSP avocado oil
Beat with a hand mixer about 3 minutes until dough-like texture.
Using a rubber scraper, move to a parchment paper lined bread pan/stone
Boil water on the stovetop or use an electric tea kettle to make boiling hot water.
Turn on the oven to about 200-210°F for 10 minutes then turn off.

Pour the boiling water into a casserole dish and put it on the bottom shelf of the oven. If you boiled it on the stovetop, you can put the pan directly in the oven
Place the loaf, covered with a towel, on the top shelf of the oven and close the door.
Let the bread proof about an hour. Do not open the oven door during this time.
Remove the towel after an hour and turn the oven on to 350° F and bake about an hour.
Insert a toothpick to make sure it's done in the center. Remove from oven and let rest for 30-60 minutes, until cooled.
Remove from pan and slice when cooled.
Do not slice before it cools
