Low Carb Yeast Bread (almond flour version) Keto friendly





This bread is durable for sandwiches! It's not crumbly like gluten-free breads. 
I am so happy to have found a great yeast bread that is keto.  I am a bread addict so trying to limit my carbs and wanting bread is a challenge. This bread is easy to make and doesn't make a mess in the kitchen.  It's like real bread. 
This one is made with almond flour. I am going to experiment with a coconut flour recipe too so stay tuned. 

The directions seem more complicated than it is. It's just a few steps. 
Once you make it, you will realize how easy and fast it is. 



You will need two bowls.  

In the first bowl:

2.5 C almond flour
5 TBSP Psyllium husk powder
4 tsp baking powder
whisk together with a hand mixer


In the second bowl:

3 tsp yeast
170 ml of hot tap water, yes hot (just a hair under 3/4 cup)
1 tsp salt
mix with a fork until dissolved


Pour into the dry ingredients and add

4 TBSP apple cider vinegar
4 eggs

 and beat with a hand mixer until well combined, mixing for about 3 minutes.




Boil water on the stovetop or use an electric tea kettle to make boiling hot water.
Turn on the oven to about 200-210°F for 10 minutes then turn off.
Shape dough into a loaf shape and put in a loaf pan the is lined with parchment paper.  A shallow loaf pan works best but any will do. I use a pampered chef stone..I cut two strips of parchment paper, one to go in each direction so the corner doesn't look bunched up.


Pour the boiling water into a casserole dish and put it on the bottom shelf of the oven. If you boiled it on the stovetop, you can put the pan directly in the oven
Place the loaf, covered with a towel, on the top shelf of the oven and close the door.
Let the bread proof about an hour.  Do not open the oven door during this time.
The one in the front is a coconut yeast bread. 




Remove the towel after an hour and turn the oven on to 350° F and bake about an hour.
Insert a toothpick to make sure it's done in the center. Remove from oven and let rest for 30-60 minutes, until cooled.  
Remove from pan and slice when cooled. 
 Do not slice before it cools.


This bread will rise differently every time.  Some may rise higher than the pics I show here. 

The only odd ingredient is the Psyllium husk powder but its available at most grocery stores or on amazon.  I got a bigger bag than I needed, thinking I would need a lot. I will have enough to make tons of bread now though.  You could buy a big bag and split it with a keto friend.
